TOMATO RECIPES! A Classic Tomato Sauce Recipe + Sourdough Grilled Cheese with Tomato Sauce

Tomato Sauce Recipe

  • 2 tablespoons olive oil

  • 1 medium garlic clove, minced

  • 1/2 cup chopped onion

  • 1/4 cup chopped carrot

  • 1/3 cup chopped celery

  • 1 teaspoon minced fresh oregano

  • 4 cups chopped (peeled) tomato (4 large )

  • 1/4 cup fresh basil leaves

  • Sugar & maple syrup for taste adjustment

  • Sea salt

Sauté the garlic, onion, carrot, and celery with a dash of sea salt for about 10 minutes until the onion is clear. Add the tomatoes and 1/8 teaspoon black pepper and simmer on very low heat for an hour, stirring occasionally to make sure sure it is not scorching. Add the basil and cook for 5 minutes. Puree and taste for sweet/sour/salty balance.


Sourdough Grilled Cheese with Tomato Sauce

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 1/2 cup basil chopped

  • 1 cup Italian cheeses (mozzarella & Parmesan)

  • 8 slices sourdough bread

  • Tomato Sauce

Heat a griddle to medium heat. Brush with olive oil and butter. Place bread on the griddle for a few minutes. Flip 4 slices and sprinkle with 2 tablespoons basil and 1/4 cup cheese. Place the remaining 4 slices (butter side down) on top of the cheesy slice. Butter and oil the griddle a bit more and move the sandwich to the oiled section. Turn the heat up slightly and grill both sides until just toasty brown and the cheese has melted.

Serve with tomato sauce for dipping.
