Did You Know: You Can FREEZE Your Greens!

Contributed by Chef Belynda Chambers

Raleigh City Farm fresh greens (kale, turnip, kohlrabi, broccoli, mustard, collards, Swiss chard, etc.) are, well, GLORIOUS nature-packaged health.

Why not take advantage of their great flavor and nutrients even after the growing season? Freeze them.

Preserve any abundance of greens instead of throwing them away. Here is how:

Prepare your greens however you like: destemming, chopping, or leaving whole-leafed. Prepare a large bowl of ice water and set aside.

Bring a large pot of water with a dash of salt to a boil. Add the greens. Cook for one minute. Drain the greens and plunge them into the ice water.

Drain again. Pick up a generous handful of greens and squeeze the excess water out of them, forming a ball. Place on a wax paper or freezer paper lined pan and freeze.

Once they're solid, place them in reusable or compostable plastic bags; label with the contents and date; and, for best nutrient content, enjoy for up to six months.

Here's to your health!
