Spiced Greens & Tahini Dressing Recipe

The greens we’re growing are packed with nutrients:

Cruciferous—Mustard and turnip greens, and dino and red kale, as well as chenopods—Swiss chard and beet greens—are all packed with vitamins like A, C, K, minerals, and phytonutrients. One cup of cooked kale is a super source of lutein and vitamin K.

A few cooking tips:

Raw cruciferous greens need a massage to make their nutrients available and to reduce cooking time.

Cook greens gently and briefly to preserve their nutrients. 

 
 

Directions for Spiced Greens & Tahini Dressing

In a skillet, melt 1 tablespoon of ghee. Add 3 cups of greens, 2 tablespoons water, 1 teaspoon lemon juice, and 1/2 teaspoon Smokey Spice Blend. Cook until the greens are just wilted. Arrange the greens on a plate and drizzle with Tahini Dressing and sprinkle with sesame seeds.

Smokey Spice Blend Recipe

  • 1 tablespoon smoked sea salt

  • 1/2 teaspoon coriander seeds

  • 1/2 teaspoon cumin seeds

  • 1/4 teaspoon mustard seeds

  • 1 teaspoon dry marjoram leaves

  • 1 teaspoon onion powder

In a spice blender, blend all the ingredients until they are a fine powder. Store in an airtight container.


Tahini Dressing Recipe

  • 1/3 cup tahini

  • 1/3 cup tamari sauce

  • 1/4 cup avocado oil

  • 1/4 cup lemon juice

  • 1/4 teaspoon white pepper

  • 1/2 cup chopped celery

  • 1/3 cup chopped green pepper

  • 2 tablespoons water

Blend all ingredients until smooth. Refrigerate.
